Steve:Hi,Kim. I heard that you're good at cooking Korean cuisine. Could you tell me something about kimchi?
Kim:Sure!Well,Kimchi is a national Korean dish consisting of fermented chili peppers and vegetables,usually based on cabbage. It is also a nutritious dish,providing vitamins,lactic acid and minerals.Kimchi can also be preserved for a long time.
Steve:OK,so does pickles. Is there more than one type of kimchi?
Kim:Yes. There are many types of kimchi.The most common kimchi variations are baechu kimchi,baechu geotjeori,bossam kimchi,baek kimchi,dongchimi,chonggak kimchi,kkakdugi,oisobagi and pa kimchi.
Steve:How to make this one?It looks lovely and smells good,too.
Kim:Oh,this is Baechu Kimchi. It is the most popular winter Kimchi made by stuffing,the blended stuffing materials,between the layers of salted leaves of uncut,whole cabbage.
Steve:OK,I see. Are there any others?
Kim:Yes,we have Yeolmu Kimchi. Although they are thin and small, young summer radishes are one of the most common vegetables for Kimchi during the spring and summer season.
Steve:Wow!And this is just a selection?Which is your favourite?
Kim:I love Pa Kimchi. The hot spicy pa kimchi,most popular in Jeolla-do,is made of medium-thick young green onions.
Steve:Well,all these kimchi dishes must be delicious.

金:有,大家還有水蘿卜泡菜。水蘿卜雖然又細又小,但它可是春夏常見的泡菜原材料。

金:我喜歡大蔥泡菜。熱辣的大蔥泡菜,在全羅道比較有名,由中等大小的大蔥腌制而成。
